Cookie pie shell store bought
1 1/2 cup sugar
1 1/2 cup water
1/2 tsp. salt
1/2 cup cornstarch
1/3 cup water
4 egg yolks, slightly beaten
1/2 cup lemon juice, taste,© and add up to total of 1 cup juice
3 tbsp. butter
1 pint of heavy whipping cream
2 tbsp. 10x sugar

1. Combine sugar, 1 1/2 cup water and salt in saucepan; heat to boiling.
2. Mix cornstarch and 1/3 cup of water to make smooth paste; add to boiling mixture gradually, stirring
constantly, cook until thick and clear. Remove from heat.
3. Combine egg yolks and lemon juice, stir into thickened mixture. Return to heat and cook, stirring . constantly until thick and clear. Remove from heat. Stir in butter. Cover and cool until lukewarm.
4. Pour filling into pie shell .
5. Whip the heavy cream in a bowl and add 10 x sugar©© to heavy cream.. Whip until
peaks are formed. Pile whip cream on top of filling and spread evenly to edge of crust.
6. Cover and place in refrig.
