1 lb frozen chopped spinach, defrosted
1 T unsalted butter
1/2 c chopped onion
1/2 lb chopped mushroom
1/2 c coconut cream or coconut milk
1/2 c diced celery
3-5 bacon slices
1/2 c parsley leaves
1 lb ground pork
1/2 c coconut flour
1 t salt
1 1/2 t pepper
2 large eggs, beaten
Tomato sauce, optional

Defrost spinach, press out liquid. Heat butter and sauce mushrooms and onions. Blend coconut cream, parsley, and celery. Combine all ingredients except bacon. Put in loaf pan. Lay bacon top.
Bake 350 for 1 hour.
