Gluten Free Chicken N Dumplins Recipe

2 T coconut oil
1 diced onion
2 minced garlic cloves
1 8 oz package sliced white mushrooms
1 c diced celery
1 c diced parsnips
1 c diced zucchini
1/4 c chopped fresh parsley
1 t rosemary
1 t sage (optional)
6 c chicken broth
salt and pepper to taste
2 los chicken breasts

1/3 c coconut flour
1/2 t baking powder
1/4 t salt
4 eggs
3 T melted coconut oil

Cook chicken then add to stock pot. Heat oil over medium heat, add garlic and onion and cook 2 minutes.
Add veggies and cook 5 minutes.
Add seasonings and broth, season with salt and pepper. Simmer 10 minutes.
Mix dumpling ingredients. Drop spoonfuls of dumpling dough into simmering pot. Cover then heat to medium low. Cook 20 minutes until dumplings are done.
