5 large red yams
3/4 pds. Land O' Lakes butter
3 c. domino's sugar
3 tbsp.mccormick vanilla extract
4 tbsp. mccormick lemon extract
5 tbsp .mccormick coconut extract
1 lg. bag marshmallows ( optional )
Directions:
Directions:
Heat oven to 350 degrees
Peel yams , slice , wash and place in large pyrex dish or pan ( preferably long dish/pan )
Cover tightly with foil and cook 1 hour
Remove from oven and pour liquid from dish/pan
Add sugar , butter and extract
Return to oven loosely covered and cook 1 hour
If adding marshmallows , cover top of potatoes with marshmallows and return to oven for 15-20 minutes ( watch closely to avoid marshmallows overcooking )
If not adding marshmallows , remove from oven , let stand covered for 30 minutes and serve
