1 small onion, chopped
2 small red onion, chopped
1 carrot, chopped
1 leek, sliced thinly
1 zucchini, diced
300g butternut squash, diced small
¾ cup/180ml of 10 min pearl barley
2 tbs of tomato paste
7 cups/1.7 litres of Homemade Chicken Broth or use stock (chicken or vegetable)
1 tsp of paprika
1 tsp of cumin
½ tsp of parsley
½ tsp of dried basil
¼ tsp of garlic powder
salt and black pepper
spray oil

Directions:
Directions:
Set instant Pot to saute mode

Add onion and leeks and fry to soften.

Add all other ingredients (except Pearl Barley)

Set to 8 minutes manual (high pressure)

Close valve

Once cooked do a quick pressure release

Stir in pearl barley

Set to 5 mins manual (high pressure)

Close valve

Once cooked again do a quick pressure release

Season as needed with salt and black pepper
