Ingredients:  
1 medium zucchini squash, seeded, pared and sliced
Egg milk wash
Flour
1 can (15oz) tomato sauce
1 can water
1 tsp Italian seasoning
1/2 tsp onion salt
1/4 tsp garlic salt
Melba toast or crackers
Dash of pepper
Parmesan or mozzarella cheese
3 tbs butter or margarine

Directions:
Directions:
Dip zucchini in egg-milk wash, then into flour.
Fry until brown.
In saucepan mix tomato sauce, water, butter, and seasonings.
Place browned squash in a greased 2 qt baking dish.
Sprinkle with Parmesan cheese and 1 package crumbled Melba toast or crackers.
Pour tomato mixture on top and sprinkle with more cheese.
Bake 350 for 20 - 25 min.

Pepperoni or Italian sausage can be added.
