3 pounds Ground beef or Venison
1/2 cup cold water
1.5 teaspoons drycure #1
(1 tablespoon Liquid Smoke)opt.
1 tablespoon Garlic Juice
1 tablespoon Onion Powder
1 tablespoon Mustard Seeds
1 tablespoon Ground Cumin
1 teaspoon Red pepper Flakes
1 teaspoon spicey pepper medley
1 teaspoon Black Pepper
1/4 cup Milk Powder

Directions:
Directions:
combine all ingredients and mix well
extrude into sausage casings or roll into lengths and wrap in plastic wrap tightly and refrigerate 24 Hours
unwrap or take cased sausage - Bake 300 degrees for 1-1/2 Hours or Smoke in Smoker until 155F
if in smoker go up from 100degrees in 50 degree intervals every hour as to not render the fat out of sausage.
