1 unbaked pie shell
2 yellow onions sliced
2 Tbsp butter
8 slices Bacon
8 eggs
1 1/2 c heavy cream or half & half
salt and pepper to taste
2 c grated sharp cheddar cheese

Directions:
Directions:
Fry the onions in butter in a large skillet over medium heat for 15-20 minutes stirring occasionally until the onions are deep golden brown. Set aside to cool.
Fry the bacon until crisp. Chop into bite size pieces and set aside to cool.
Preheat oven to 400º. Roll out pie crust and press into a large fluted tart pan. Whip the eggs, cream, salt and pepper in large bowl. Mix in onions, bacon and cheese. Pour into pie crust. Place on baking pan. Cover lightly with foil. Bake for 40-45 minutes. Remove foil and continue to bake 10-15 minutes or until center is set and crust is golden brown. Remove from oven and let sit for 10-15 minutes (it will firm up more as it cools).
