2 tsp Olive Oil
1 lb Chicken (shredded) or Ground Beef
1/2 C Onion finely diced
1 pk taco seasoning
1 4/5 oz can diced tomatoes (do not drain
1 1/4 C tortilla chips crushed
16 oz refried beans
1 14 C cheddar cheese (shredded)
Toppings such as shredded lettuce, diced tomatoes
Cooking spray

Preheat oven 350 Coat a 9" square pan or 2 quart baking dish w/ cooking spray
Heat the olive oil in a large pan over medium high heat. Add the meat, cook till done breaking up the meat w/ a spatula
Add the onion and cook for an additional 3 to 4 minutes
Place a layer of tortilla chips in the bottom of the prepared pan., Spread a layer of refried beans over the top.
Pour the meat mixture over the beans and top with cheese.
Bake for 15 to 20 minutes or until the cheese is melted.
Add the toppings if desired, then serve!
