Stuffed Calamari in Tomato Sauce Served on Spaghetti Recipe

Ingredients: 12-15 medium sized whole calamari 2-3 eggs ½ cup Parmesan cheese ½ cup bread crumbs ¼-½ cup chopped fresh Italian parsley Salt & pepper to taste
4-6 cups cooked tomato sauce 6 cups cooked spaghetti

Directions:1. Separate the curly tops off the calamari from the body. Chop the tops and save for the stuffing.
2. Beat 2 eggs. Add all the other stuffing ingredients and mix well. Add about a quarter cup of the tomato sauce to the stuffing. The stuffing should be firm enough to handle but not too dry. Add the other beaten egg or adjust the Parmesan and bread crumbs until the stuffing can be handled easily.
3. Fill the calamari bottoms about ¾ full and secure the top with a toothpick. Tip: Don’t fill them up too much or they may explode in the sauce.
4. Drop them gently into boiling sauce and let cook for about 10 minutes.
5. Arrange hot cooked spaghetti into plates. Spoon the sauce and calamari over the pasta.
6. Optional: Sprinkle grated Parmesan cheese and fresh chopped parsley over the top and serve hot. |
