1 large Onion, chopped
2 Garlic cloves, chopped
1 tsp Oregano, dried
Salt and pepper to taste
1 can chopped tomatoes
1 tsp Thyme
2 tbsp Olive oil
500gr Mussels (already cooked and cleaned)
100gr Feta Cheese
1 chili pepper chopped (optional)

Preheat oven 375 .
In a large frying pan on medium heat, fry in oil the onions until soft. Add garlic, sugar, oregano, salt, pepper and stir until onions become tender. Add chili pepper and thyme. Stir well. Next add the tomatoes.Let simmer for 2 minutes. Add the cooked Mussels and cook for 2 minutes. Remove from heat. In an oven proof baking dish add the mussels and top with the Feta cheese.Bake till Feta melts.
