1 can crushed pineapple (16 ounces) 2 tbsps. cornstarch 4 tbsps. green creme de menthe 3 tbsps. sugar
Drain juice from crushed pineapple + add cornstarch and sugar and simmer over low heat until clear and thick (stir constantly). If mixture becomes too thick, dilute with water until desired consistency is reached. Cool mixture slightly, than add creme de menthe. Add pineapple. Chill.
