Grapes should be over ripe (collected after 1st frost)

Crush grapes and measure

Than make a syrup of 4 cups of sugar (brown sugar works best) and 4 cups water. Boil and let cool.

Place 1 cup grapes/1 cup sugar water in crock.

Add 1 to 2 cakes of yeast

Keep in temperature of 65 to 70 degrees Fahrenheit. to activate.

Leave 5 days. Each night take cover off and stir well.
Then, let all of it drip in jelly bag.

Than put in jugs and put plastic hose through cork and let work. The hose should extend into the water and keep it below the water sa as to have the wine work. When bubbles stop, the wine should be ready for sealing. One could wait a few more days to be sure. Than wine should not be used for at least 105 days.

After the mash has been strained, taste to see how sweet it is.It should have another syrup added to it the same way added cup for cup.

Instead of 4 cups sugar and 4 cups water, I used 1 cup sugar and 2 cups water.
