Ingredients: 1 cup butter ½ cup + 2 tbsp sugar 2-½ cups flour

Directions:Cream together butter and sugar with a KitchenAid or electric mixer. Add flour and mix slightly. You can do this with the KitchenAid or mixer but just do it a little bit. Turn out onto floured board.
Tip: Put parchment paper on the board before you flour it so that the dough doesn't stick.
Gradually work flour into butter-sugar mixture with hands until it forms a soft ball. Add a dusting of flour on the board and rolling pin and roll out ½" thick. Slide onto ungreased cookie sheet with the help of a metal spatula. Flute edges and prick all over with a fork. Bake at 300º for 30 min. or until delicately brown. Sprinkle with sugar right away. Let cool about 5-10 mins. and cut into small pieces.
Tip: To make more edge pieces, cut the dough in half and roll it out in 2 separate rounds. |

Notes: Scotch shortbread is a McAleer family tradition and was always made at the holidays. We had lots of it growing up and your grandma used to send each of us a batch at Christmastime. After she died, I carried on the family tradition. I made many batches just for Ali over the years and sent them to her while she was at Cal Poly.
