3 eggs
12 T. sugar, divided
6 T. minute tapioca
4 c. milk
2 tsp. vanilla

Directions:
Directions:
Separate eggs. Beat egg whites in medium bowl with mixer o n high speed until foamy. Gradually beat in 6 T. sugar until soft peaks form.
Mix tapioca, milk, egg yolks, and remaining sugar (6 T.) in medium saucepan. Let stand 5 minutes. Bring to full boil on medium heat, stirring constantly. Remove from heat. Add egg white mixture; stir until blended. Stir in vanilla.
Cool 20 minutes; stir. Serve warm or chilled. Keep leftover pudding refrigerated.
