1/2 cup wheat bulgur
1/3 cup chopped roasted almonds
3 green onions, thinly sliced
1/2 tsp dry thyme

4 large Portobello mushrooms, discard stems
4 Tbsp olive oil
1/2 cup crumbled Feta cheese
2 Tbsp fresh lemon juice
5 oz. mixed greens (about 6 cups)
1/2 English (hothouse) cucumber, thinly sliced

Directions:
Directions:
Preheat oven to 400º F.

Cook the bulgur according to the package directions; transfer to a medium bowl and let cool to room temp. Stir in the almonds, green onions, thyme, 1/2 tsp salt, 1/4 tsp pepper.

Meanwhile, place the mushrooms on a rimmed baking sheet, rub with 2 Tbsp of the olive oil and season with 1/4 tsp salt & pepper. Roast them side up until tender, 18-20 minutes.

Top the mushrooms with the bulgur mixture and sprinkle with Feta. Roast until heated through, about 4 more minutes.

Whisk together the lemon juice, remaining 2 Tbsp olive oil, and 1/4 tsp each of salt & pepper in a large bowl. Add the cucumber, toss to combine.

Drizzle the mushroom with olive oil and serve with the salad.
