3 Cups all purpose flour
2 Teaspoons baking powder

1 1/2 Cups white sugar
1 Cup buttermilk
1 Cup pureed cooked BEETS
1/2 Cup canola oil
2 eggs
1 Tablespoon unsweetened cocoa powder
1 Teaspoon vanilla extract
1 Teaspoon vinegar
1 Teaspoon baking soda
1/2 Teaspoon salt

Preheat oven to 350* F (or 175* C) line a 9x13 inch pan with parchment paper.
Sift flour & baking powder together in a large bowl & set aside.

Whisk sugar, buttermilk, beets, oil, eggs, cocoa powder, vanilla extract, vinegar, baking soda & salt together in a large bowl. Add flour mixture about 1/3 at a time & mix just until incorporated. Pour batter into prepared pan. Tap pan firmly to settle the batter & to remove large bubbles.


Bake in preheated oven until a tooth pick inserted in the center of the cake comes out clean, about 35 minutes.

Frost as desired.
