Dressing

1/3 cup olive oil
3 Tbsp fresh lemon juice
1 clove garlic, minced
Salt
Pepper, freshly ground

Salad

11/4 cups (8oz) dry orzo
1 cup crumbled feta
1 medium cucumber, diced
1 pint grape tomatoes, halved
13/4 cup black olives, sliced
1/2 cup red onion, rinsed under water and diced
3 Tbsp chopped fresh basil
2 Tbsp chopped fresh parsley

Directions:
Directions:
In a jar mix together olive oil, lemon juice, garlic, salt and pepper. Set aside.

Cook orzo as directed on the package. Drain and let cool about 5 minutes.

Add all of the salad ingredients and the cooked orzo to a large bowl and toss. Pour dressing on top and toss again to coat evenly.

Store in refrigerator. Serve within a few hours for best results.
