1 1/2 lb chicken (boneless) - cut into 1" cubes

1 can unsweetened pineapple chunks (15oz) undrained

1/2 C soy sauce

1/4 C veg oil

1 Tbs brown sugar

1 tsp garlic powder

2 tsp ground ginger

1 tsp dry mustard

1/4 tsp pepper

Green pepper

whole mushrooms

onion - cut into 1" pieces

cherry tomatoes

cooked rice

Place chicken cubes in a large shallow container. Drain pineapple juice, reseriving 1/2 cup. Set pineapple chunks aside.

Combine juice and next 7 ingredients in a small sauce pan, stirring well; bring to a boil. Reduce heat, and simmer, uncovered 5 min. Let cool. Pour over chicken. Cover and refrigerate at least 1 hour.

Remove chicken from marinade. On skewers alternate chicken, veggies and pineapple.

Grill kabobs 20 min or until chicken is done.

Serve over hot rice
