2-8oz. pkgs. cream cheese
¾ cup sugar
¼ cup sour cream
1½ tsps. orange zest, grated
1 tsp. vanilla
¼ cup orange juice
1-25 oz. envelope unflavoured gelatin
2 cups heavy cream
½ cup raspberry jam
1 - 6oz. prepared graham cracker pie crust

Beat cream cheese and sugar until smooth. Reduce speed to low. Beat in sour cream, zest and vanilla until combined. Meanwhile, fill a large bowl half way with ice water. In pot over low heat combine juice and gelatin. Cook, stirring until gelatin dissolves. Stir into cheese mixture over ice; let stand, stirring occasionally until very thick, 8-10 minutes. In a clean bowl with clean beaters, beat cream until soft peaks form; fold into cream mixture. Transfer 2 cups of mixture to another bowl; stir in jam until combined. Spoon half of plain mixture into one pie crust; spread raspberry mixture over. Refrigerate or freeze until firm, 1 hour. Garnish if desired.
