8 large Granny Smith apples, cored & peeled
cup brown sugar
2 tbsp. all purpose flour
1 tsp. ground cinnamon

Crust:
2 cups all purpose flour
2 tbsps.. white sugar
1 tsp. salt
1 cup butter, frozen
12 tbsps. ice water

Directions:
Directions:
Whisk flour, sugar and salt together in a large bowl. Grate frozen butter into the flour and toss lightly with your fingers until thoroughly combined. Sprinkle in ice water and stir with your fingers mixing and firmly kneading until dough comes together in a ball. Divide dough into 2 pieces making sure that one half is slighlty larger than the other. Wrap in plastic, flatten and chill for at least 30 minutes or overnight. Resting tenderizes the pastry making it easier to roll. Remove the pastry from the refrigerator and allow to warm slightly until it is pliable. Lightly flour your hands, the rolling pin, your work surface and the dough. Roll out the larger piece of pastry into a circle, large enough to slightly overlap the edges of a 4" deep glass pie dish. As you roll for ease of handling, lightly flour the dough everytime its diameter doubles. Transfer the dough to the pie dish by folding into quarters then unfold it in the dish. Preheat oven to 375F. Toss the apple slices with the brown sugar, flour and cinnamon. Add the apple mixture to the bottom crust. Roll our remaining pie dough and carefully place over the top filling. Crimp the edges of the dough, tightly sealing them. Poke a few holes in the top and place on the bottom rack in the oven for an hour or until the juices are bubbling.
