4 slices thick bacon, cut into 1/2" pieces (can leave bacon out for vegetarians)
1 small onion, diced
1 small head of cabbage, cored and chopped into 1" pieces
2 tsp light brown sugar
Kosher salt
black pepper
chopped parsley leaves for garnishing.

In a large heavy-bottomed skillet, cook bacon until crisp, remove bacon to a paper towels, leaving the drippings
in the skillet. Add onion, cook until translucent, about 2 minutes. Add the shredded cabbage and brown sugar.
Season with salt and pepper. Cook, stirring occasionally, until the cabbage is just tender, about 15 minutes.
Return bacon to skillet and toss to combine. Cook a minute or 2 to heat through. Top with parsley and serve hot.
