4 cups flour
1/2 tsp salt
1/4 tsp nutmeg
4 large eggs
1 1/4 cup milk

Add flour salt and nutmeg into stand mixer bowl. Stir to combine. With the dough hook attachment, "knead" dough for 16-20 minutes. Using a wooden spoon scrape dough from sides of bowl, if bubbles appear it's done, if not, continue kneading.

If too runny, add more flour, if too stiff, add milk.

Bring 2 quarts of salted water to a boil, reduce to a simmer. Press dough through a spätzle press and cook 2-3 minutes. Spatzle will float to the top when done. Using a slotted spoon take out and place in ice water to stop the cooking process. Toss with warm melted butter.

This is a wonderful recipe, however you really need either a ricer or a spätzle press. You can try to roll our individually but it will be difficult. I watched a youtube video to make sure both the mixing process and the cutting process was done correctly.
