1 frozen fillet of haddock, thawed
4 T. margarine
2 garlic cloves
2 T. chopped onion
3-6 coriander seeds, crushed
⅛ tsp. salt
pinch of black pepper
⅓ c. white wine
2 T. concentrated lemon juice
1 egg
½ to 1 c. Italian style bread crumbs

Place the following ingredients in a microwavable two-cup measure: margarine, garlic, onion, coriander, salt, pepper, white wine and lemon juice. Microwave until margarine is melted, approximately 20 seconds. Set mixture aside to cool. While mixture is cooling, cut the haddock in half, rinse under cold water and squeeze gently to remove excess water. (Rinsing is a very important step to remove any fishy odor/taste, so do not skip it.) On one plate scramble the egg and add about 1 teaspoon of the microwaved mixture. On another plate, spread bread crumbs. Dredge the fish in the egg mixture making sure to cover the entire piece of fish. Then dredge the fish in the bread crumbs. Place the fish in two casserole dishes about the same size as the fillet. Stir the ingredients in the two-cup measure and spoon around the fish. Do not put any mixture on top of the fish. Discard any remaining mixture. Sprinkle the top of the fillet with a small amount of paprika. Cover. Microwave for 7-8 minutes on high. Serve immediately.
