Marinate brisket over night or at least 4 hours:

Marinade
½ can of beer
Little bit of soy sauce
Worchester sauce
Salt, pepper and garlic (to taste)
Creole seasoning (or you can just do a rub)

Brisket 14 - 16 lbs

Directions:
Score the fat, fat side up. Place brisket on Traegar for about 6 hrs to get to 170º, then it will stay at 170 º for about another 6 to 8 hours. When it reaches 195º-200º, take it off smoker, wrap in tinfoil and towels and place in cooler for an hour, fat side up. Should not need to do more than 18 hours cooking, but in general, plan for cooking time at 1 ½ hour per pound. Once it hits temperature, it can sit wrapped in tinfoil and towels for 2-6 hours.
