1 broiler/fryer chicken, cut up in serving size pieces (2-3 lbs)
1 yellow onion, chopped
green pepper, chopped
1 chicken bouillon cube
1 8 oz can tomato sauce (use only half)
2 c. white rice
1 tsp. salt
1 tsp. garlic powder or minced garlic
tsp. cumin (to taste)
3 tsp. oil

Directions:
Directions:
Brown cut up pieces of chicken in oil and remove from pan, then brown rice with remaining grease. Add chopped onion and chopped green pepper. Add salt, garlic and cumin. Add tomato sauce and enough water to cover rice about 1 inches (about 3 cups). Add one cube of chicken bouillon (can also just use chicken broth). Place browned chicken skin side up on top of rice and water. Once boiling returns, cover and simmer about 20-25 minutes. If needed you can add water around the edges.
