½ c. butter
1 c. brown sugar
1 egg, beaten
1 c. applesauce
1 ½ c. flour
1 tsp. baking soda
1 tsp. cinnamon
¼ tsp. salt

Directions:
Cream together butter and brown sugar, then add egg and all other ingredients, mixing well by hand. Drop by teaspoon onto a greased cookie sheet at 375º for 12 minutes.

This recipe given to Terry by a close family friend who would make these cookies in the fall with Stephanie, Laura, Andrew and her son, Paul often. We all still love these cake-like cookies.
