Sauce:

5 T Olive Oil
4-5 cloves Fresh Garlic (minced)
2-32 oz cans Crushed Tomatoes
2-6 oz cans Tomato Paste
1 t Garlic Powder
6-8 leaves Fresh Basil (minced) (or 1 T dried)
6-8 leaves Fresh Oregano (minced) (or 1 T dried)
Water
1-2 lbs Pasta (angel hair, rigatoni, etc.)

Meatballs:

1-2 lbs Lean Ground Beef or Sirloin
1/4-1/2 lb Ground Pork or Italian Sweet Sausage ( I prefer to use the Italian Sweet Sausage)
3-4 slices Bread (torn into small cubes)
2 Eggs (large)
1/2 C Tomato Sauce
4-5 cloves Fresh Garlic (minced)
1/2 C Fresh Parsley (minced) (or 1/4 cup dried)
1/4 t Garlic Salt
1/4 C Parmesan Cheese

Directions:
Sauce: In large pot, sauté the minced garlic in olive oil and ¼ C water until tender (do not brown garlic). Add crushed tomatoes, garlic powder, sweet basil, and oregano. Stirring constantly, bring to slight boil and reduce heat to low simmer. Add tomato paste. Use tomato paste cans to add 5-6 cans of water to sauce, stirring gently until sauce is smooth. Cover and simmer 2 hours or more (stir frequently to keep from sticking).

Meatballs: Place breadcrumbs, eggs, tomato sauce, garlic, parsley, garlic salt, and Parmesan cheese in large bowl. Mix well, breaking up any large pieces of bread. Add meats and mix well. Shape mixture into balls and add gently to the simmering sauce. Simmer in sauce for 1 hour.

Cook your favorite pasta according to package directions. Drain well. Add sauce and serve with meatballs, salad, and Italian bread.
