Chicken Legs and Thighs
2 or 3 medium potatoes
2 carrots
2 onions
1 celery stalk
1 small ripe tomato
2 chicken bouillon cubes
parsley (optional)
salt/pepper to taste
large stock pot

Directions:
Directions:
1. Start with about half full stock pot (filled with water).

2. Take off as much skin from the chicken as you can and add the chicken to the pot. Let it come to a boil.

3. Peel potatoes, carrots, onions and put aside with the celery, tomato and bouillon cubes. When the water is boiling, skim brown bubbles off the top of the water and discard. Continue boiling for 1/2 hour longer.

4. At this point, add all the vegetables & cubes and continue cooking for 1.5 hours. Season to taste.

5. At the end of the 2 hrs, you can either strain the broth or you can cut up the chicken & vegetables and make chicken/veg soup.
