Ingredients: 1 to 2 Slabs Ribs 2 -4 tsp salt 2-4 tsp pepper 1 to 1 1/2 cup pineapple and orange mixed /or apple juice 1/4 cup soy sauce 1-2 cloves garlic 3-4 medallions of fresh ginger
Sauce for Ribs option 1
2 TB ketchup 2 tsp sriracha 2 TB cornstarch 1/2 cup brown sugar
Marinade and Sauce Option 2 Huli Huli
4 lb ribs
1 cup pineapple juice 1 cup pineapple chunks 1/2 cup soy sauce 1/2 cup brown sugar 1/2 cup ketchup 1/4 cup sherry 1 tbsp fresh ginger grated 4 garlic cloves minced 1/2 tsp sesame oil 1/2 tsp white pepper
Place all in blender. Use as a marinade and as a sauce. If marinating, reserve 1 1/2 cups for basting. If you've marinaded, place ribs in instant pot with one cup of pineapple juice and cook as directed. If smoking, smoke spare ribs @ 225 for 5-6 hours// Baby backs for 4 to 5 hours.

Directions:Strip ribs of skin on bone side. Trim into manageable pieces, 3-4 ribs per cut. Marinade for a few hours if you have the time, if not, put all but salt and pepper in pot. Swish the ribs around in the juices, salt and pepper. Stand ribs up around circling around the outside of the pot to the center. Be sure to put the meaty side down into the pot. Set timer to 25 minutes, turn off warming. After cooking let rest naturally for 5 minutes then release steam.
At this point you can broil with some bbq sauce for 5- 10 minutes or grill for a few minutes to get that char. You could strain the liquid in the pot through a fat strainer and return to pot, cooking down and adding some brown sugar for a sauce. |
