3 cups frozen shredded hash brown potatoes
3/4 cup shredded Monterey Jack cheese
1 cup cubed fully cooked ham
1/4 cup chopped green onions
4 large eggs
1 can (12 oz) evaporated milk
1/4 tsp pepper
1/8 tsp salt

Directions:
Directions:
Place potatoes in an 8-inch baking dish. Sprinkle with cheese, ham and onions. Whisk eggs, milk, pepper and salt; pour over all. Cover and refrigerate for several hours or overnight.

Remove from refrigerator 30 minutes before baking. This is a must, otherwise the cooking time will increase by approximately 30 minutes. Preheat 350º. Bake, uncovered, 55-60 minutes or until a knife inserted near the center comes out clean.

I have used sausage or bacon instead of ham. You could even get creative and use all three. You could also omit the meat for those vegetarians you love.
