3 cups water or chicken broth
1 cup wine (whatever you are drinking)
2 tbsp. cornstarch
1 tbsp. fresh thyme, minced
1 tbsp. tarragon
1 tbsp. rosemary
1 tbsp. chives
salt & pepper, to taste

Directions:
Directions:
Pour off most of the accumulated fat, carefully reserving the juices. Add the water or chicken broth to the pan along with the wine and any reserved juices, scraping the bottom of the pan to dissolve all brown bits. Pour all of the liquid into a small saucepan, scraping every bit of flavour out of the pan. Bring to a simmer. Dissolve the cornstarch in a splash of water and add to the pan, whisking until the gravy thickens. Whisk in some fresh herbs, then taste. Season with salt and pepper.
