1 (5 lb.) beef roast
1 (32 oz.) box (or cans) beef broth
1 (0.7 oz.) pkg. Italian dressing mix
2 (1 oz.) pkg. au jus gravy mix
water
2 lbs. potatoes, mashed
1 loaf baguette bread
⅓ c. grated Parmesan cheese
2 Tbsp. fresh snipped parsley

Preheat oven to 350º. Place the beef roast in a roasting pan. In a bowl, whisk together the broth, gravy mix, and Italian dressing mix. Pour over the roast. Add enough water to cover the roast. Cover and bake at 350º for 1½ hours. Reduce heat to 300º and continue to bake for another hour. Check for tenderness and continue to bake until fork tender. Remove from oven. Let cool slightly and then shred beef and reserve gravy.

Slice the baguette bread into ½ inch slices. Lightly toast them on a baking sheet in the oven for 8 minutes at 350º. Remove from oven.

Assemble the casserole by placing bread slices in an even layer on the bottom of a 9 x 13 inch baking dish. Add the shredded beef, then the mashed potatoes. With the back of a large spoon, press several craters in the mashed potatoes and pour 2 cups of the reserved gravy on top. Sprinkle with cheese and parsley. Bake for 10 minutes to melt the cheese. Serve with extra gravy.
