1 pre-made graham cracker pie crust
2 Granny Smith apples
1 egg
1 beaten egg yolk (reserve egg white)
10 oz light cream cheese
¼ cup sugar
¼ tsp vanilla

Topping:
¼ cup plan flour
¼ cup brown sugar
¼ cup butter, melted
¼ cup chopped walnuts

Preheat oven to 375º.

Peel, core, and slice apples into chunks. Bring water to a boil and then add apples and cook until they are no longer crisp but still firm (4-5 minutes). Drain and rinse with cold water to halt cooking. Drain any excess liquid.

Whisk egg yolk and spread evenly onto pie crust. Bake for 5 minutes until golden brown, then remove and reduce oven to 350º.

Beat the egg and reserved egg whites. Thoroughly fold together cream cheese, egg, ¼ cup sugar, and vanilla until smooth (a blender will help aerate the mixture, but is not required). Pour mixture into crust. Slice apples and distribute evenly on top, lightly pressing into the cream cheese.

Bake for 30-40 minutes, or until filling is set (a tooth pick inserted should come out with only a few crumbs on it).

Sprinkle finely chopped walnuts over the top. Combine the remaining topping ingredients and sprinkle over the top of the pie, then place the pie under the broiler until the sugar bubbles (watch carefully - a second could mean the difference between perfection and a chunk of charcoal).

Refrigerate until completely set, about 3-4 hours.
