For the Chicken:
4 boneless chicken breasts, pounded
½ c. flour
1 tsp. salt
dash of pepper
⅛ tsp. ground ginger
½ c. butter
1 c. cold water



For the Sauce and Casserole:
4 tbsp. butter
4 tbsp. flour
1 tsp. salt
½ c. sour cream
½ c. milk
1 can sliced mushrooms
6 fresh mushrooms
1 c. grated Velveeta cheese
1 c. reserve liquid from chicken

For the Chicken:
Combine dry ingredients and coat chicken. Melt butter in pan and sauté chicken over low heat 15-20 minutes. Remove chicken and add water to pan for reserve liquid, then set reserve liquid aside.

For the Sauce and Casserole:
In clean pan, melt butter, add flour, salt and blend. Add sour cream, milk and reserve liquid. Return to low heat until thick, add ½ cup grated Velveeta cheese and mushrooms. Place chicken in buttered casserole dish with sauce and sprinkle with remaining ½ cup grated Velveeta cheese. Bake at 350º for 25-30 minutes and serve with rice pilaf and green vegetable.
