3 Eggs
⅔ cup (130g) Sugar
1 ½ tsp. (7.5ml) Vanilla, or Zest of 1 Orange or Lemon.
1 c. (120g) All Purpose Flour.
1 tsp. (5ml) Baking Powder.
¼ tsp. (1.25ml) Salt.
6 tbsp. (60ml) Melted Unsalted Butter or Margarine etc.
1 tbsp. (7g) Powdered Sugar.

Beat eggs with sugar until pale yellow and eggs have volume, ~ 5 - 8 min.
Add flavoring.
Fold dry ingredients into eggs.
Once combined, mix melted butter into batter.
Refrigerate for at least 1 hour or overnight.
Place approx 1 tbsp of batter into each well of a Madeline pan or a small muffin pan that has been sprayed with cooking oil.
Bake @ 350ºF for ~ 7 - 8 min.
Let cool on a wire rack.
Sprinkle powdered sugar on Madeline's
