1 c. butter or margarine
1 c. brown sugar, packed
1 c. white sugar
2 beaten eggs
1 tsp. vanilla
1 ½ c. flour
1 tsp. salt
3 tsps. baking powder
3 c. quick cooking oatmeal
1/2 c. chopped walnuts

Directions:
Directions:
Preheat oven to 350º. Cream shortening and sugars. Add eggs and vanilla. Beat to incorporate. Sift together dry ingredients and add to batter. Add oats, nuts and stir. Form into long rolls in wax paper. Chill several hours or overnight. Slice and bake about 10 minutes.

Makes about 5 dozen cookies depending on how large you make the rolls to cut. I make mine 2 1/2 - 3 inches in diameter. Slice with thin, sharp, knife, bake and ENJOY.
