3 large ripe bananas
18 oz. canned coconut milk or coconut cream
½ c. lightly packed brown sugar
1½ tsp. vanilla extract
½ tsp. lemon juice
pinch kosher salt
6½ tbsp. chia seeds
3 tbsp. toasted coconut chips, for garnish

Directions:
Directions:
Combine bananas with the coconut milk, sugar, vanilla, lemon juice and salt in a blender. Puree until smooth, about one minute.

Add the chia seeds; blend on low speed to combine. Place mixture in a container to set. Stir after 20 minutes. Chill for at least four hours before serving. Top with bananas and toasted coconut chips.
