4 tomatoes, assorted colors ok
1 package crumbled goat cheese
2 ears of corn
fresh thyme

For the Dressing:
¼ c. truffle oil
½ tsp. dijon mustard
½ lemon
1 tbsp. water
1 tsp. red wine vinegar
salt and pepper to taste

Directions:
Directions:
Broil corn for a few minutes, then run under cold water to cool. Cut tomatoes into square pieces and arrange on a square serving plate. Shave the corn off the cob and put onto tomatoes. Top with crumbled cheese and some fresh thyme. Mix the contents for the dressing in a jar. Pour over tomatoes and enjoy!
