1 ¼ c. boiling water (boil more water than you need and then measure it as water will evaporate)
½ c. butter
1 c. rolled oats (oatmeal)
2 eggs
1 c. sugar
½ tsp. salt
1 c. brown sugar - packed
1 ½ c. sifted flour
½ tsp. cinnamon
1 tsp. baking soda

Cream Cheese Icing
¼ c. butter (at room temperature)
1 tsp. vanilla (optional)
1 pkg. (8 oz) cream cheese
2 c. powdered sugar
½ c. chopped pecans (optional)

Directions:
Directions:
Combine boiling water, butter, and oats, let stand 20 minutes. Add eggs and mix well. In separate bowl, combine sugar, brown sugar, flour, baking soda, cinnamon, and salt. Add to oat mixture and stir (by hand), then bake in greased 9x13 pan at 350º for 30 minutes. Cool before icing.

Mix butter and cream cheese with hand mixer, add sugar, slowly mixing well, add vanilla and pecans. Spread on top of cake.
