1 lb Flank Steak
tsp kosher salt
1/8 tsp freshly ground pepper

Directions:
Directions:
Season both sides of steak with salt and pepper. Prepare a hot fire on a grill and oil the rack or heat up a cast iron skillet on the stove. Let skillet get very hot if cooking indoors. Using tongs place the steak in skillet or over the heat elements of a gas grill or charcoal grill. Cook - turning once, 5-7 minutes per side for medium rare, 6-8 minutes for medium and 8-10 minutes per side for well done. To test, cut into the thickest part of the steak. Transfer the steak to a platter and let rest for about 10 minutes, then cover with foil so steak can absorb the juices. Cut steak across the grain into thin slices. Serve with Salsa Verde. (Meat is usually served with pink middle on the rare side).
