1 lb Flank Steak
½ tsp kosher salt
1/8 tsp freshly ground pepper

Season both sides of steak with salt and pepper. Prepare a hot fire on a grill and oil the rack or heat up a cast iron skillet on the stove. Let skillet get very hot if cooking indoors. Using tongs place the steak in skillet or over the heat elements of a gas grill or charcoal grill. Cook - turning once, 5-7 minutes per side for medium rare, 6-8 minutes for medium and 8-10 minutes per side for well done. To test, cut into the thickest part of the steak. Transfer the steak to a platter and let rest for about 10 minutes, then cover with foil so steak can absorb the juices. Cut steak across the grain into thin slices. Serve with Salsa Verde. . (Meat is usually served with pink middle on the rare side).
