Easy enchiladas Chicken OR Beef

6' flour tortillas
Shredded chicken or cooked hamburger meat
Mexican rice or boil-in-bag white rice with taco seasoning
Can of black beans
Vegetable like corn, peas or diced potatoes in a can
Store-bought enchilada sauce large can ( I prefer green sauce)
Shredded Cheese: Your choice mozzarella or cheddar

Preheat the oven to 350
In a large bowl, mix well your choice of cooked meat or no meat for vegetarians, rice, black beans and choice of vegetable. Add 1 cup of shredded cheese and a little bit of the sauce.
In a baking dish or rectangle cake pan, line bottom with a little bit of enchilada sauce.
Warm tortillas in the microwave for 15 sec to make them easy to roll
Spoon filling on to tortillas. Make them as fat as you want but make sure you can still roll it up.
Place them in pan seam side down at the edge so it won't unroll, and cover with the rest of the sauce
Sprinkle shredded cheese over all of it.
Spray Foil and Cover tight. Bake for about 35 minutes. then remove foil and broil till cheese is toasty
Even better the next day so make a bunch.

Make it your own. Leave out black beans or use 3 bean blends. Or no beans at all! I like it best with the green sauce. It's very simple and very tasty!! Love you all.
