1 pkg. rainbow peppers
1 small Vidalia onion, chopped (optional)
1 can chunk pineapple, drained and chunks cut in half
1 can black beans, drained and rinsed
1 c. chunky salsa (I use medium and sometimes more salsa.)

Directions:
Directions:
Stir fry peppers and Vidalia onion until crisp and tender. Stir in rest of ingredients and heat until bubbly. Serve with white or brown rice.

This recipe was given to me by my sister Vi, who lives in Florida. I make it whenever I have leftover salsa to use.
