1 Deep Dish Pie Crust (homemade or store bought)
1 T Butter or Oil
1 Medium Chopped Onion
1/2 lb. Mushrooms, half sliced, half chopped
Salt and Pepper to taste
1/4 t Dry Thyme
1/2 t Dry Mustard (Coleman's if possible)
2 Eggs
1c Milk
1 1/2c Shredded Cheese

3 slices Bacon

Fry the bacon in a pan to render the fat. Remove the strips as cooked. Chop up bacon into crumble pieces.

Using the bacon fat or butter/oil (if making this vegetarian) saute onions over medium heat until soft. Add mushrooms, salt, pepper, thyme, mustard. Continue cooking until mushrooms are soft. Remove from heat and let cool.

Take pie crust and add 1/4 of cheese to the bottom. On top of that put the crumbled bacon. Top that with mushroom mix. Finish with the rest of the cheese.

Mix milk and eggs well and pour over the mushroom mix. Bake at 350 degrees F for 35-45 mins. Top should be golden brown and or solid in the center. Remove from oven and let cool so that when cut pie pieces have a chance to hold together.

Any type of cheese works. Mix up the mushrooms. Ham or sausage is nice for meat.

I found this recipe in the original Moosewood Cookbook. It is great as a lacto-ovum vegetarian pot luck. The bacon was added later. I've used crumbled vegetarian sausage.
