Gramcracker Crust:
Mix Gramcracker and butter with 1/4 cup sugar. Put in a springform pan and bake 350 for 15 minutes

Filling:
1/4 lb. softened butter
3/8 pkg softened cream cheese
t tsp. lemon peel
1/2 c. heavy whipping cream (extra heavy Bavarian cream) But 1 pint and safe rest for the end
2 Tbsp. flour
3/4 c. sugar
4 egg yolks (save whites for later)
Wisk all above together

Separately blend egg whites till stiff then fold into mixture. Pour into gram cracker crust and bake approximately 1 1/2 hour at 375 degrees, till center is firm. Let set in the hot oven with the door open. Use rest of heavy whipping cream to pour over cheesecake when cooled.
