2 tsp. garlic powder
1 tsp. ground cumin
1 tsp. paprika
1 tsp. chili powder
½ tsp. crumbled dried oregano
½ tsp. ground coriander
¼ tsp. ground cinnamon
2 - 4 bay leaves
2 c. no sodium added chicken stock
1 jar salsa verde (low sodium)
4-5 lb. pork loin

Spray bottom of crockpot. Place bay leaves on bottom. Cut pork loin into large ½-inch thick slices and place in crockpot. Add dry seasoning to top of pork. Add chicken stock on top. Cook on low seven to eight hours or until pork is easy to shred. Once pork is cooked, skim all fat off top and remove about half of the liquid. Shred the pork in crockpot, add whole jar of salsa verde. Leave in crockpot for an additional 15 minutes. Serve with your favorite taco toppings & enjoy!
