1 sheet thawed puff pastry
1 large egg
⅔ c. gorgonzola
1 pear, sliced thin
½ small onion, sliced thin
2 tbsp. fresh thyme leaves

Directions:
Directions:
Preheat oven to 425º. Lay dough on baking sheet lined with parchment paper. Poke holes over dough leaving one inch of outer rim untouched. Bake dough until it starts to puff (about 12 minutes). Saute onion in frying pan until soft. Whisk together egg and gorgonzola mixture until smooth and spread over just-baked dough. Scatter onion and pear over cheese. Put back in oven and bake until pastry is golden brown and egg has set (about 15 minutes). Sprinkle with thyme and cut into squares.
