1 9 inch pie shell, baked and cooled
1/3 c cornstarch
1 1/2 c sugar
1/4 t salt
1 1/2 c water
4 egg yolks
1/4 c lemon juice
2 T grated lemon peel
2 T butter

Directions:
Directions:
Combine cornstarch, sugar and salt in medium saucepan. Add water, mixing well. Bring to boil over medium high heat, stirring constantly. Boil one minute then remove from heat. Pour half the mixture over the slightly beaten egg yolks, combine well. Pour back into pan, let boil 1 minute , stirring constantly. Remove from heat and add lemon juice, peel and butter. Stir until all ingredients are blended. Top with meringue and bake 375 for about 10 minutes or until meringue is golden.
