½ c. canola oil
½ c. sugar
½ c. apple cider vinegar
1 can pinto beans, drained and rinsed
1 can black beans, drained and rinsed
1 can white corn, drained
1 can petite diced tomatoes, drained
1 red onion, chopped fine
1 green pepper, chopped fine

Directions:
Directions:
Bring oil, sugar, and vinegar to a boil. Completely dissolve the sugar and let cool. Mix beans, corn, tomatoes, onion and green pepper with oil mixture and chill overnight.

Serve with tortilla chips
